Ingredients and Equipment

  • 2 cups arugula
  • 2 tbsp cooked beet root, sliced
  • 4 figs, sliced
  • 2 tbsp goat cheese
  • 1 tbsp toasted walnuts
  • 1/2 tsp Dijon mustard
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp shallots, chopped
  • 1/2 tsp honey
  • Salt and pepper to taste1
You will also need 2 mixing bowls, a spoon and a serving plate or bowl.
  1. To make the dressing, whisk together the balsamic vinegar, honey, mustard, olive oil, salt and pepper in a small mixing bowl. Add the shallots and set aside.
  2. In a larger mixing bowl, add arugula, goat cheese, beets, figs and walnuts. Toss all ingredients.
  3. Drizzle the dressing over the top and mix together.
  4. Serve and enjoy!
