Ingredients and Equipment
- 2 cups arugula
- 2 tbsp cooked beet root, sliced
- 4 figs, sliced
- 2 tbsp goat cheese
- 1 tbsp toasted walnuts
- 1/2 tsp Dijon mustard
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp shallots, chopped
- 1/2 tsp honey
- Salt and pepper to taste1
You will also need 2 mixing bowls, a spoon and a serving plate or bowl.
Cooking Process
- To make the dressing, whisk together the balsamic vinegar, honey, mustard, olive oil, salt and pepper in a small mixing bowl. Add the shallots and set aside.
- In a larger mixing bowl, add arugula, goat cheese, beets, figs and walnuts. Toss all ingredients.
- Drizzle the dressing over the top and mix together.
- Serve and enjoy!
